Pasta‚ chicken‚ bacon‚ croutons‚ and Caesar salad dressing are hearty main dishes that can be cooked in 40 minutes․ I cook this dish for six people eating one large portion of cold pasta and lettuce․ The Caesar salad dressing is tasty and adheres well to other salad ingredients when the salad is tossed before serving․

I use mayonnaise as the base of this dressing․ Mayonnaise replaces egg yolks and oil processed in a food processor to make a creamy dressing․ I recommend adding anchovies to this salad dressing․ Anchovies packed in oil are an important part of this recipe․ They add flavor to the dressing without leaving a fishy taste in the dressing․
Cook the bacon separately and fry the seasoned chicken in bacon grease․ Add olive oil only if needed․ Let the chicken and bacon cool completely before serving on lettuce to keep the lettuce from wilting and salad dressing from hardening when mixed into the salad․
I use chunks of ciabatta bread for croutons‚ not cubed bread‚ it's too much work․ Rinse cooked penne under cold running water and give the colander a good shake to remove excess water․ If you mix pasta salad with wet cooked pasta‚ there will be liquid in the bottom of the serving dish․

Ingredients
- •1 cup full-fat mayonnaise (240g, good quality)
- •½ cup freshly grated Parmesan (40g)
- •2 anchovy fillets (marinated in oil)
- •1 lemon (juice only, about 2 tbsp)
- •1 tsp Dijon mustard
- •1 tsp Worcestershire sauce
- •1 small garlic clove
- •¼ tsp salt (for the dressing)
- •¼ tsp black pepper (for the dressing)
- •12 oz penne (350g, or other short-cut pasta)
- •2 chicken breasts (7-9 oz/200-250g each)
- •6 slices bacon
- •1 large head romaine lettuce (chopped)
- •¼ cup shaved Parmesan (20g, or to preference)
- •3 ½ oz ciabatta (100g, roughly torn into small bite-sized pieces)
- •½ tsp salt (plus more as needed, for the chicken)
- •½ tsp garlic powder
- •¼ tsp black pepper (for the chicken)
- •1 tbsp olive oil (1-2 tbsp, as needed)
Instructions
- 1
Slice each chicken breast horizontally through the centre to make 4 even pieces. Coat with 1/2 tsp salt, 1/2 tsp garlic powder, and 1/4 tsp black pepper. Set aside.
- 2
Fry the bacon over low-medium heat until crisp. Remove it, leaving the fat in the pan. Raise the heat slightly to medium, add the chicken, and add a drizzle more olive oil if needed. Fry for a few mins on each side until golden outside and white and piping hot through the centre. Set aside to cool completely, then slice into thin strips just before using.
- 3
Put the torn ciabatta on a baking tray. Drizzle with 1-2 tbsp olive oil, add a good pinch of salt, and toss. Bake at 180C/350F for around 12mins, until deep golden and crispy. Set aside to cool.
- 4
Cook the penne in salted boiling water according to the packet instructions. Drain, rinse with water until completely cool, then shake very well in a colander to remove as much water as possible.
- 5
While the pasta cooks, add the mayonnaise, grated Parmesan, anchovies, Dijon mustard, Worcestershire sauce, garlic, lemon juice, 1/4 tsp salt, and 1/4 tsp black pepper to a food processor. Blitz until smooth and fully blended.
- 6
Add the drained pasta to a large serving bowl. Top with the chopped romaine, bacon, chicken, croutons, and shaved Parmesan. Pour over all the dressing, or your preferred amount, then toss well and serve.
