Frying beef pieces coated with flour on the stove top can enhance the flavor of beef stew․ I include fried beef and some of the cooking oil from frying in my slow cooker beef stew․ Frying beef on the stove top makes beef stew in a slow cooker more flavorful and tender․ I would not skip frying unless you have a reason to do so․

I cut Yukon Gold potatoes and carrots into slices of a similar size to ensure even cooking․ Onions and garlic are added on top of the meat‚ then the broth mixture goes on top․ This recipe calls for a 6-quart slow cooker‚ which gives plenty of room for the ingredients to cook evenly․
Beef cooked in a slow cooker on LOW for 7 to 8 hours or HIGH for 4 hours or until tender․ A cornstarch slurry added during the last 30 minutes of cooking will thicken the sauce so that it coats the back of a spoon․ Frozen peas added during the last 30 minutes of cooking will maintain their color and texture․ Peas added earlier will lose their color and texture․
I serve this in a plain white ceramic bowl with chopped parsley for decoration because I think it looks nice with the dark gravy and white bowl (yes‚ I know this is a small point‚ but I enjoy it)․ Hot buttered sweet and savory bread is a good side dish․ Toasted bagels are also good for dipping into vegetables and gravy․
Why you'll love this recipe
- One skillet layer browns the meat to a dark crust before the meat goes into the slow cooker․
- Scraping the browned material from the pan gives the gravy a taste of the pan․
- Sizes of potato and carrot pieces will cook at the same rate‚ preventing overcooking․
- Adding the cornstarch mixture near the end helps the gravy thicken and gives it a glossy appearance․
- Frozen peas are cooked for the last 30 minutes to keep them green and firm․
- The extended LOW cooking time helps tenderize the beef and lets the vegetables hold their shape․
Ingredients
- •2 lbs beef chuck roast (cut into 1.5-inch chunks)
- •¼ cup all-purpose flour (for coating the beef)
- •2 tbsp olive oil (for searing)
- •1 large yellow onion (diced)
- •3 cloves garlic (minced)
- •3 large Yukon Gold potatoes (peeled and cubed)
- •4 large orange carrots (sliced into thick rounds)
- •3 cups low-sodium beef broth
- •2 tbsp tomato paste
- •1 tbsp Worcestershire sauce
- •1 tsp salt (adjust to taste)
- •½ tsp black pepper (freshly ground)
- •2 tbsp cornstarch (for the slurry)
- •2 tbsp cold water (for the slurry)
- •1 cup frozen green peas (added at the end)
- •¼ cup fresh parsley (finely chopped, for garnish)
Instructions
- 1
Pat the beef chunks completely dry with paper towels, then toss them with the flour until evenly coated.
- 2
Heat the olive oil in a large skillet over medium-high heat. Arrange the beef in a single layer and sear for 2-3 minutes per side until a deep, dark brown crust forms. Transfer the beef to the slow cooker.
- 3
Pour a small splash of beef broth into the hot skillet. Scrape up the browned bits from the bottom and pour the liquid over the beef in the slow cooker.
- 4
Layer the cubed potatoes, thick carrot rounds, diced onion, and minced garlic over the beef.
- 5
Whisk the remaining beef broth, tomato paste, Worcestershire sauce, salt, and black pepper in a bowl. Pour the mixture over the vegetables and beef.
- 6
Cover and cook on LOW for 7-8 hours or on HIGH for 4 hours, until the beef is incredibly tender.
- 7
About 30 minutes before serving, whisk the cornstarch and cold water together in a small bowl to make a smooth slurry. Stir it into the slow cooker with the frozen green peas.
- 8
Cover and cook for the remaining 30 minutes, until the gravy is thick, dark brown, and coats the back of a spoon. Garnish with chopped parsley before serving.
