Ground beef with 85% lean, 15% fat is moist and suitable for this baked taco recipe. The fat content is high enough to provide flavor for a skillet sauce. Prepare the beef by cooking it with chopped onion and taco seasoning mix, then add water. Serve the beef in taco shells with crisp edges for dinner.

Shell halves are baked twice at 400 degrees. I arrange shells in a 9x13-inch pan with the flat part of the shell facing down when filling the shells, and cover the bottom of the shells with beans before adding meat. The cheese topping is melted and bubbly, and the edges of the shells are brown when the dish is done.
I use shredded cheese from a block in this recipe. Shredded cheese melts better than prepackaged shredded cheese, which may include starch. Load the taco shells and ground beef mixture generously with cheese. Let the taco shells sit for about a minute before adding lettuce or salsa.
Everyone eats these foods in their own way. Provide hot tacos and other toppings so that diners can use their hands to add sour cream, Greek yogurt, guacamole, sliced avocado, salsa, and pico de gallo to hot tacos without touching the baked shells.
Reasons to make this
- An 85/15 ground beef blend provides moist filling and prevents dry beef in the cheese topping after minimal cooking.
- A cup of refried beans fills all ten shells and keeps the filling off the shell bottoms.
- Freshly grated Mexican cheese blend can be added to taco fillings and used as a topping for tacos.
- One onion seasons the whole pan. Taco seasoning and water provide a coating sauce.
- Stand-and-stuff shells are left upright in the baking dish. It's cleaner to stuff a whole batch at once than to stuff them one at a time.
Ingredients
- •1 lb ground beef (85/15 recommended)
- •1 small onion (finely chopped)
- •1 packet taco seasoning (about 1 ounce)
- •½ cup water
- •10 hard taco shells (stand-and-stuff style recommended)
- •1 cup refried beans
- •2 cups shredded Mexican blend cheese (freshly grated is best)
Instructions
- 1
Preheat the oven to 400°F (200°C).
- 2
Cook the ground beef and onion in a large skillet over medium-high heat until the beef is browned. Drain the excess grease.
- 3
Stir in the taco seasoning and water. Bring to a simmer and cook for 2-3 minutes, until slightly thickened. Set aside.
- 4
Stand the taco shells upright in a 9x13-inch baking dish. Bake for 5 minutes.
- 5
Remove the hot shells from the oven. Spread a thin layer of refried beans in the bottom of each shell, then spoon in the taco meat.
- 6
Top the tacos generously with shredded cheese. Return them to the oven and bake for 7-10 minutes, until the cheese is melted and bubbly.
- 7
Let the tacos cool for a minute before serving with your favorite toppings.
