Thinly sliced cooked roast beef rolls up and unwinds easily in these French dip tortilla rolls. I buy roast beef from the deli that is sliced thin enough to stay with the tortilla when rolled. Slices of provolone cheese are provided at the table for dipping the warm pinwheels in dark brown au jus.

I use full-fat cream cheese for the spread. Mix in garlic powder and prepared horseradish until the spread is smooth. Let the cream cheese warm to room temperature before adding it to a soft tortilla. Full-fat cream cheese may puncture a soft tortilla.
Put roast beef and cheese in the center of each tortilla for evenly distributed roast beef that won't cause the tortillas to bulge and be hard to cut into uniform spirals. One-inch spirals are easier to cut from tortillas with more even distributions of roast beef and cheese. A serrated knife works best for cutting tortillas. Clean the knife between cuts with a wet cloth to prevent sticking during cutting.
The brief baking time is intended to melt provolone cheese, not toast the tortillas. I take the pan of tortillas out of the oven when the provolone cheese looks glossy. I pour hot broth into small white ramekins. Small ramekins are best for broth. I top the pinwheels and ramekins of broth with parsley and scallions. All are served on a wooden cutting board.
Reasons to make this
- Thinly sliced deli roast beef can be rolled up in pinwheels without falling apart. This prevents the pinwheels from breaking apart when eaten.
- Full-fat cream cheese spreads well once softened and helps hold tortillas together at the edges.
- Provolone cheese melts well in the oven and can be used to add flavor to roast beef.
- Beef bone broth provides a dark color to the dipping sauce without a packet.
- Fresh parsley and minced green onions are added over the beef and cheese in the rollups. The rollups are served hot.
- Four tortillas can be made into one-inch pinwheels for a party or lunch.
Ingredients
- •4 large soft flour tortillas (10-inch (25cm))
- •8 oz full-fat cream cheese (softened to room temperature (225g))
- •1 tsp garlic powder (5g)
- •1 tbsp prepared horseradish (15g)
- •8 slices mild provolone cheese (about 6 oz (170g))
- •¾ lb thinly sliced cooked brown deli roast beef (340g)
- •2 cups beef broth (475ml)
- •1 tbsp soy sauce (15ml)
- •1 tsp Worcestershire sauce (5ml)
- •1 tbsp fresh parsley (delicate flakes, 4g)
- •2 tbsp scallions (finely chopped, 12g)
Instructions
- 1
Whip the softened cream cheese, garlic powder, and prepared horseradish in a medium mixing bowl with a hand mixer or sturdy spatula until smooth and spreadable.
- 2
Lay the 4 large 10-inch (25cm) soft flour tortillas flat on a cutting board. Divide the cream cheese spread among them and spread it to the edges.
- 3
Place 2 slices of mild provolone down the center of each tortilla. Top with an even layer of the thinly sliced cooked brown roast beef, about 3 oz (85g) per tortilla.
- 4
Roll each tortilla tightly from the bottom edge. Wrap the logs securely in plastic wrap and refrigerate for at least 1 hour.
- 5
Unwrap the chilled logs and trim the empty ends. Slice the remaining logs into even one-inch (2.5cm) pinwheels with a sharp serrated knife, then arrange them flat on a parchment-lined baking sheet.
- 6
Preheat the oven to 350°F (175°C). Bake the pinwheels for 3 to 5 minutes, until the provolone is glossy and melted without making the tortillas hard or crispy.
- 7
While the pinwheels warm, combine the 2 cups (475ml) beef broth, 1 tbsp (15ml) soy sauce, and 1 tsp (5ml) Worcestershire sauce in a small saucepan over medium heat. Bring the broth to a gentle simmer until hot, dark brown, and translucent.
- 8
Pour the hot broth into small round white ceramic ramekins. Arrange the warm rollups beside them on a rustic wooden cutting board, then garnish the broth and pinwheels with fresh parsley and finely chopped scallions.
