Country-style ribs are made from shoulder meat. I buy boneless or bone-in country-style ribs to prepare this dish in the oven. Country-style ribs contain both dark and light meat and fat, which helps keep them moist in the oven and enables them to absorb barbecue sauce added at the end of cooking (shoulder cuts are forgiving here).

I rub brown sugar over all sides of the rack of ribs and brown the pork in a large pan before moving it to the baking dish. Browning the meat adds more flavor to ribs. This is a step I don't skip. Tips for browner meat include drying off the pork before cooking.
The covered bake is where meat softens. Pour broth into the skillet with ribs that have been browned. Cover and cook in the oven at 325°F. After 2 hours of cooking, the ribs should be soft enough to fork through easily. Drain most of the liquid in the pan and apply sauce to the ribs.
Cook the ribs uncovered until the sauce on the ribs is caramelized and bubbling, and let the ribs sit for a few minutes before eating to avoid burning your mouth on the edges. I like to serve ribs with roasted potatoes, cornbread, salad, or coleslaw on the side. Adding John Legend's macaroni and cheese to the meal is a good idea.
Reasons to make this
- Country-style ribs are flavorful, fatty cuts that can be cooked in the oven to keep them tender.
- The brown sugar rub is made from typical pantry ingredients and adds color and flavor to the pork when seared.
- A small amount of broth poured on the ribs cooks and evaporates as steam when covered.
- You can buy boneless or bone-in country-style ribs for the same measured 3.5-pound batch.
- One cup of BBQ sauce is enough to sauce an entire pan of pork with some leftover sauce on the ribs after cooking.
- The finished ribs can be combined with other foods.
Ingredients
- •3 ½ lbs country-style pork ribs (boneless or bone-in)
- •1 tbsp avocado oil (or another high-heat oil)
- •½ cup beef broth (or chicken broth or water)
- •1 cup BBQ sauce (your favorite brand)
- •¼ cup brown sugar (packed)
- •1 tbsp smoked paprika
- •2 tsp garlic powder
- •2 tsp onion powder
- •1 tsp salt
- •½ tsp black pepper (freshly ground)
Instructions
- 1
Preheat the oven to 325°F (165°C).
- 2
Pat the country-style ribs dry with paper towels.
- 3
Combine the brown sugar, smoked paprika, garlic powder, onion powder, salt, and black pepper in a small bowl.
- 4
Rub the spice mixture over all sides of the pork ribs.
- 5
Heat the avocado oil in a large skillet over medium-high heat and sear the ribs on all sides until browned, about 2-3 minutes per side. Work in batches if needed.
- 6
Transfer the seared ribs to a baking dish or Dutch oven and pour the beef broth around them.
- 7
Cover tightly with a lid or aluminum foil and bake for 2 hours, until the ribs are tender.
- 8
Remove the cover and drain most of the liquid from the dish.
- 9
Brush the ribs generously with BBQ sauce.
- 10
Return the ribs to the oven uncovered and bake for another 20-30 minutes, until the sauce is caramelized and bubbly. Serve hot.
